Pancake Mix Muffins (3 Flavors, 1 Pan!) 

Ingredients: – Pancake mix (about 2 cups) – Eggs (2 large) – Milk (1 cup) – Melted butter or oil (1/4 cup) – Vanilla extract (1 teaspoon)

Preheat and Prep: Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners. 

Mix Batter: In a mixing bowl, combine the pancake mix, eggs, milk, melted butter or oil, and vanilla extract. Stir until just combined. Be careful not to overmix; a few lumps are okay. 

Divide Batter: Divide the batter evenly among three separate bowls. 

Chocolate Chip Muffins: Stir in a handful of chocolate chips into one bowl of batter. Blueberry Muffins: Gently fold in fresh or frozen blueberries into another bowl of batter. Fruit & Nut Muffins: Mix in diced fruit (such as apples or bananas) and chopped nuts (such as walnuts or pecans) into the third bowl of batter.

Fill Muffin Cups: Spoon the flavored batters into the prepared muffin tin, filling each cup about two-thirds full. 

Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean. 

Cool and Serve: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
