Select Fresh Carrots: Choose fresh, firm carrots with vibrant orange color and smooth skin. Organic or locally sourced carrots often have the best flavor. 

Preheat Oven: Preheat your oven to 400°F (200°C). This high temperature helps caramelize the natural sugars in the carrots, enhancing their sweetness. 

Prepare Carrots: Wash the carrots thoroughly and peel them if desired. Trim off the tops and ends, then slice the carrots into uniform pieces to ensure even cooking. 

Seasoning: In a mixing bowl, toss the carrot slices with olive oil to coat them evenly. Season with salt, freshly ground black pepper, and any other desired spices or herbs. Common options include garlic powder, cumin, paprika, or thyme. 

Roasting: Arrange the seasoned carrot slices in a single layer on a baking sheet lined with parchment paper or aluminum foil. Make sure there's some space between each piece to allow for proper caramelization. 

Bake: Place the baking sheet in the preheated oven and roast the carrots for about 20-25 minutes, or until they are tender and slightly caramelized. You can check for doneness by piercing them with a fork; they should be fork-tender. 

Optional Glaze: For an extra layer of flavor, consider drizzling the roasted carrots with a honey-butter glaze or a balsamic reduction during the last few minutes of cooking.
