Grandma's Sweet Potato Pie

Ingredients 3 large sweet potatoes, peeled and diced ½ orange, peel cut into thin strips 1 pastry for a 9-inch pie crust 2 eggs

1 tablespoon pineapple juice 1 tablespoon salted butter, melted 1 teaspoon vanilla extract 1 tablespoon all-purpose flour 1 ½ teaspoons ground cinnamon

½ teaspoon ground nutmeg ½ teaspoon ground ginger 1 pinch ground cloves 1 pinch salt 1 cup white sugar 1 cup heavy whipping cream

Directions In a large pot, combine the sweet potatoes and orange peel; cover with water and bring to a boil. After lowering the heat to medium-low, simmer for ten minutes or until tender. After thorough draining, allow to cool.   

Set oven temperature to 400 F, or 200 C. Press pie crust into a 9-inch pie pan.  

Cool sweet potatoes and mash or fork them. Add eggs and mix well. Stir in pineapple juice, butter, and vanilla. Stir in flour, cinnamon, nutmeg, ginger, cloves, and salt. Add sugar and dissolve. Whisk in heavy cream.  

Put sweet potato mixture in pie crust. Bake for 40–50 minutes in the preheated oven until a toothpick inserted into the center comes out clean. Place on a cloth to cool on a table or window sill.
