Golden Autumn Sweet Potato Pie 

Ingredients: For the crust: – 1 1/4 cups all-purpose flour – 1/2 teaspoon salt – 1/2 cup cold unsalted butter, cut into cube – 2-4 tablespoons ice water

For the filling: – 2 cups mashed sweet potatoes (about 2 medium sweet potatoes) – 1/2 cup packed brown sugar – 1/4 cup granulated sugar – 2 large egg – 1/2 cup evaporated milk

– 1/4 cup melted butter – 1 teaspoon vanilla extract – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – 1/4 teaspoon ground ginger – 1/4 teaspoon salt

Instructions: 1. Prepare the crust: 1. In a large bowl, mix the flour and salt together. 2. Add the cold butter cubes and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.

Preheat the oven:Preheat your oven to 375°F (190°C). 

Roll out the crust: 1. On a lightly floured surface, roll out the chilled dough into a circle large enough to fit into a 9-inch pie dish.

Prepare the filling: 1. In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, eggs, evaporated milk, melted butter, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth and well combined.

Serve: 1. Serve slices of the golden autumn sweet potato pie with a dollop of whipped cream or a scoop of vanilla ice cream.
