Crustless Sweet Potato Pie

Ingredients 4 cups baked mashed sweet potatoes can also use Bruce's yams 2 sticks salted butter 1 ½ cups white sugar ½ cup brown sugar 1 cup evaporated milk

4 eggs 1 teaspoon cinnamon ½ teaspoon nutmeg 2 teaspoons vanilla extract 1 teaspoon lemon zest

Instructions Heat the oven to 350°F. Set aside two lightly greased pie tins.  

Put all the ingredients in a big bowl, preferably glass but also heavy plastic. Mix the crustless sweet potato pie ingredients for 45 seconds to 1 minute with an electric hand mixer on low speed.  

Pour half the batter into each pie pan with a ladle. Place pies in oven.  

Bake for 50–60 minutes until done. When the pie lightly jiggles in the middle but not around the edges, it is done. Cover both pies loosely with aluminum foil at 40 minutes. This will prevent overbrowning in the final minutes of cooking.  

Remove pies from oven when done. Cut them after one hour of cooling. If desired, serve each pie with whipped cream, crumbled pecans, or vanilla bean ice cream.
